Ingredients:
1 cup cauliflower rice
2 cups romaine lettuce
5 oz sliced bell peppers
1/2 small red onion
4 oz chicken breast
1/4 avocado
4 tbsp salsa
1 tsp pepper
1 tsp salt
2 tbsp fajita seasoning
Instructions:
Start by preheating your oven to 350 degrees. Season chicken breast with salt, pepper and fajita seasonings. Next take your sliced peppers and onions and toss lightly in olive oil or avocado out (stay away from vegetable oil!). Spread on a baking sheet and again season with salt, pepper and fajita seasonings. Pop both chicken and veggies in oven for 18-20 minutes. When chicken comes out of the oven, cut into chunks or strips. Next take your cup of cauliflower rice and season with salt and pepper then place in a bowl. Microwave for 2-3 minutes until hot and tender. Let cool for a few moments then add lettuce on top, followed by veggies, chicken, 1/4 avocado and salsa. Option to add fresh cilantro and hot sauce on top. Finally, dig in and join the party!
