Ingredients: Serves 4
– (2) 32 oz cartons of Chicken broth
– 1 lb chicken breasts
– 1 celery stalk bunch
– 1 bag baby carrots
– 1 white onion
– 16 oz cauliflower rice
– 1 clove fresh garlic
– 2 tbsp fresh parsley
– 1 tsp salt
– 1 tsp pepper
Instructions:
Place you chicken in pressure cooker with one carton of chicken broth. Add salt and pepper and cook on high for 22 minutes if frozen and 18 minutes of thawed. While cooking, chop up all of your veggies and set aside. When chicken is finished, remove from pot and cut into chunks then place back into pot. Next add all veggies, spices and second carton of chicken broth. Cook for an additional 4 minutes on high. When finished, your soup is cooked to perfection! If using a stove top pot, simply cook chicken before hand then put all ingredients in a pot on the stove top! Next, dig in and let the soup warm your soul!
