Kale, Chicken and Fresh Apple Salad with Balsamic ACV Dressing

Salad Ingredients:
2 & 1/2cups chopped kale
5 oz chicken breast
1 medium apple of choice
1 medium lemon
1/2 tsp salt
1/2 tsp pepper

Salad Instructions:
Place your kale in a large bowl and cut lemon in half. Squeeze juice out of one half lemon into bowl of kale and massage with hands. This should take 3 or so minutes. Use other lemon if needed and massage until kale is soft. Chop apple into chunks and add on top. Coat your chicken breast with salt and pepper then cook in oven at 350 degrees for 15-20 minutes. Cut into strips then place on top of kale and apple.

Dressing Ingredients:
1/4 cup balsamic vinegar
1/4 cup apple cider vinegar (with the mother)
1/8 cup water
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
5 drops liquid Sweet Leaf Stevia

Dressing Instructions:
Add all ingredients above into a medium sized bowl. Whisk together until well combined. Pour over salad, mix together and enjoy! If you’re feeling fancy try marinating the chicken with this dressing! Don’t forget about the salad bowl, shallow and wide = not spilling it all over your table! Happy Friday all!
