Ingredients:
– 3 medium tomato’s
– 4 oz chicken breast
– 2 cups vegetable broth
– 1/2 tsp salt
– 1/2 tsp pepper
– 1/2 tsp cayenne powder (optional)
– basil leafs
Instructions:
Place chicken in instant pot with 1 inch of water or chicken broth. Cook for 8-10 minutes on high pressure. Remove and put on plate to cool, shred chicken with two forks and season with salt and pepper. Next dice your tomatoes and place in instant pot with 1/2 cup vegetable broth and cook for 3-4 minutes on high pressure. When finished, blend cooked tomatoes in blender or use immersion blender until well combined. Add the rest of the vegetable broth, chicken and any other seasonings you desire and to pot. Turn on low for 20-25 minutes or high pressure for 2 minutes. Your soup should be hot and ready to serve! Top with basil and enjoy!
